
Happy St. Patrick’s Day, friends! Leprechauns will love this truffle recipe, because it’s SO easy to prepare. Have a bit ‘o fun in your kitchen, and enjoy these scrumptious treats!
Ingredients (Makes about 60 small truffles)
32 chocolate sandwich cookies (such as Oreo Cookies)
8 ounces cream cheese, softened
1 teaspoon peppermint extract
1 cup confectioner’s sugar
Directions
Step 1) Combine cookies, cream cheese, and peppermint extract in a blender or food processor. Pulse until a smooth consistency is achieved.
Step 2) Refrigerate mixture for at least two hours.
Step 3) (Wear kitchen gloves – this is easy but messy!) Roll mixture into small (bite sized) balls. Then, roll balls in confectioner’s sugar. That’s it!
Store in refrigerator until serving.
