I love to take some asparagus and cherry tomatoes, put them on a baking sheet with garlic and olive oil and roast them 🙂

I love to make a veggie stew. It’s very easy as you throw in the pot anything you have around the kitchen, like potatoes, tomatoes, suede, beans, onion, etc. What I love about it is that it’s very consistent, so you will feel full afterwards and you get plenty of vitamins. I see it as a lovely, tasty comfort food.

I love fresh corn (cut off the cob), sauteed in butter with onion and garlic, then pureed with cream or milk. I use this instead of a red sauce for veggie lasagna. Yum. You can leave some kernels of corn whole to add to the puree for texture.
Delicious! I like to buy as many ears of corn as I can carry when they are in season, for both canning and freezing. Perhaps this autumn I’ll try making corncob jelly…
