Bolinhos de Laranja e Amendoa (Little Orange Almond Cakes)






Little orange almond cakes are a Portuguese delight. Fluffy and full of rich, buttery flavor, these tiny treats are a delight with your morning coffee. Enjoy!

Ingredients (Makes 40 Bolinhos)

1/2 cup all-purpose flour
1/4 cup almond flour
1 teaspoon baking powder
Dash salt
2 eggs
1/2 cup sugar
1/2 cup orange juice
1/2 cup melted butter (do not use margarine)
1/4 teaspoon almond extract

Directions

Step 1) Grease mini muffin tins with nonstick spray. Set aside.
Step 2) Whisk together eggs and sugar until light and fluffy. This will take 2 or 3 minutes.
Step 3) Whisk in orange juice, melted butter, and almond extract.
Step 4) Add flours, one at a time, along with baking powder and salt. Whisk gently until all ingredients are incorporated.
Step 5) Spoon mixture into mini muffin tins (fill muffin tins halfway). Bake in preheated 350 degree oven for 13 – 15 minutes or until edges begin to turn golden brown.
Step 6) Remove pan(s) from oven. Carefully run a butter knife around the edge of each orange almond cake. Gently remove cakes from pan(s) and turn upside down on a wire rack to cool.
