Speculaaskruiden (Windmill Cookie Spice Mix)

If you love the taste of windmill cookies, you love speculaaskruiden. Imagine this same spice blend in your holiday gingerbread men! The recipe below makes enough spice mix for approximately three batches of cookies, and easily doubles for gift giving.

Stir together (if using powdered spices) or grind together in a coffee grinder (if using whole spices):

4 teaspoons cinnamon

1 teaspoon cloves

1 teaspoon mace

1/2 teaspoon ginger

1/2 teaspoon cardamom

1/2 teaspoon star anise

1/4 teaspoon nutmeg

1/4 teaspoon allspice

Store in an airtight container, away from sunlight and heat!
