
While these are “technically” a side dish, these Four Cheese Potatoes Au Gratin are delicious enough to serve as a main course for a simple weekday dinner. Enjoy!
Ingredients (Serves 4 generously)
4 large potatoes, washed and sliced 1/4 inch thick (no need to peel)
1 large onion, peeled and sliced 1/4 inch thick
4 tablespoons butter
1 1/2 cups milk
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper (adjust to taste)
1/2 cup grated cheddar cheese
1/2 cup grated muenster cheese
1/2 cup grated fontina cheese
1/4 cup grated parmesan cheese
Directions
Step 1) Layer potatoes and onions, overlapping slices, in a well greased 9″ x 13″ baking pan.
Step 2) Melt butter in a medium skillet over low-medium heat. Add 1 cup of milk, salt, pepper, cheddar, muenster, and fontina cheese. Whisk together over low-medium heat until a smooth mixture forms. This will take a little while, and will look a bit clumpy before it smoothes out. Don’t worry, just keep whisking.
Step 3) In a shaker container, shake together remaining 1/2 cup milk and the flour. When the flour and milk mixture is free of lumps, pour it into the skillet. Continue whisking until the sauce is well blended and slightly thickened.
Step 4) Pour cheese mixture evenly over the sliced potatoes and onions. Cover with foil and bake in a preheated 375 degree oven for 1 hour.
Step 5) After one hour, remove foil and sprinkle with parmesan cheese. Return to oven for an additional 20 minutes.
Step 6) Remove from oven and let stand for 10 minutes before serving.
The only thing better than potatoes is potatoes and cheese!
