Five Minute Salsa Chicken

IMG_2228Do you have five minutes? Great – because that’s about how long you need to prepare this delicious Salsa Chicken! Two ingredients + one slow cooker = a delicious dinner that you can prep early and forget about for a few hours.

Here at Crowded Earth Kitchen, we watch for a big sale on boneless, skinless chicken, and stock up! We make four batches of this recipe all at once in a Nesco roaster, and freeze family size portions in freezer bags. The bags of Salsa Chicken thaw easily for use in chicken salad, in sandwiches and wraps, on tacos, or in chili. Enjoy!

Ingredients (serves 4 with leftovers)

3 pounds boneless, skinless chicken

2 cups medium or spicy salsa

Directions

Layer chicken and salsa in a slow cooker, such as a Crock Pot. Cook on low for 7 – 8 hours or until chicken easily falls apart when pulled with a fork. Shred chicken using two forks, and serve or freeze. So easy!
