Ingredients (Serves 2 as an entree or 4 as a side)
1 heart of romaine lettuce, finely sliced
1 cucumber, peeled and diced
1/4 cup of crumbled feta cheese
For the dressing:
1/3 cup plain, nonfat Greek yogurt
2 cloves garlic, pressed or finely minced
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
2 tablespoons fresh, finely diced herbs OR 1/2 teaspoon dried herbs (recommendations: mint, fennel, or parsley)
- Thoroughly whisk together dressing ingredients in a large mixing bowl until ingredients are fully incorporated.
- Add lettuce, cucumber, and feta to the mixing bowl. Use a rubber scraper to toss ingredients together, scraping the bottom and sides of the bowl to fully coat the vegetables with dressing.
- Spoon tzatziki salad onto serving plates, and garnish with more herbs if desired.
