Simple Tzatziki Salad

Ingredients (Serves 2 as an entree or 4 as a side)

1 heart of romaine lettuce, finely sliced

1 cucumber, peeled and diced

1/4 cup of crumbled feta cheese

For the dressing:

1/3 cup plain, nonfat Greek yogurt

2 cloves garlic, pressed or finely minced

1 tablespoon extra virgin olive oil

1 tablespoon lemon juice

2 tablespoons fresh, finely diced herbs OR 1/2 teaspoon dried herbs (recommendations: mint, fennel, or parsley)


  1. Thoroughly whisk together dressing ingredients in a large mixing bowl until ingredients are fully incorporated.
  2. Add lettuce, cucumber, and feta to the mixing bowl. Use a rubber scraper to toss ingredients together, scraping the bottom and sides of the bowl to fully coat the vegetables with dressing.
  3. Spoon tzatziki salad onto serving plates, and garnish with more herbs if desired.

How simple is that? If you want to be fancy, top your salad with a few grilled shrimp or a cooked, sliced chicken breast. Serve with a baguette to round out a complete meal. Or, leave your tzatziki salad as is and enjoy with a glass of red wine for a little Mediterranean vacation at your kitchen table.
