Five Minute Shrimp Noodle Miso Soup

This soup doesn’t take any longer than the blue box of instant noodle soup, but offers a rich, homemade Japanese flavor profile. If the ingredients are unfamiliar, rest assured that they are easily found in many large supermarkets and/or online. Let’s get started!

Ingredients (for one hearty bowl)

1 generous tablespoon miso paste

2 cups boiling water

1 brick (square) of instant ramen noodles, cooked and drained

1/4 cup firm tofu, sliced into 1/2 inch cubes

6 cooked, peeled shrimp

Several slices of nori to garnish

The noodles I used are shown above; feel free to use any brand of instant ramen noodles

To prepare, pour 1 cup of boiling water over miso paste in a large serving bowl. Whisk together until miso paste is dissolved. Add 1 additional cup of very hot water and stir. Add noodles, shrimp, and tofu to bowl. Garnish with nori. Serve immediately!
