
High in both protein and fiber, Brown Rice Pudding is equally delicious as a satisfying breakfast and a lovely dessert. Enjoy!
Ingredients (Serves 4 – 6)
2 eggs
1/3 cup white sugar
1 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins
2 cups cooked brown rice
Directions
Step 1) Beat eggs and sugar together until smooth and light in color.
Step 2) Whisk milk, vanilla extract, and spices into egg mixture.
Step 3) Add raisins and cooked brown rice. Pour mixture into a deep dish pie plate or casserole dish.
Step 4) Place pie plate or casserole dish inside a larger pan (such as a 9″x13″ baking pan). Add boiling water to the larger pan so that the water is approximately 1 inch deep.
Step 5) Carefully place pan of boiling water, with pie plate or casserole dish of Brown Rice Pudding mixture in the center, in a preheated 325 degree oven.
Step 6) Bake mixture for 50 – 60 minutes, or until the mixture holds its shape when sliced with a knife.
Serve warm or cold!
I like that there is not much sugar in this, and I bet the texture is wonderful!
