I bought everything I needed for this recipe at Aldi for just under $5, which means that these tostadas average out to about sixty cents each. That’s about half the cost of a drive-thru tostada. Ingredients (Makes 8 tostadas)
1 package of tostada shells (at least 8)
8 oz package of cream cheese, softened
1 can of black beans
1 ripe avocado, sliced
1 ripe tomato, diced
1 tablespoon taco seasoning
Directions
Step 1) Blend cream cheese and taco seasoning together. Spread 1 generous tablespoon of seasoned cream cheese on each tostada shell.
Step 2) Drain black beans and heat in a microwave-safe container. If you want, you can get all fancy and add a bit of diced onion or a scoop of salsa to the black beans. That’s entirely optional. Warm the black beans in the microwave, then spoon a generous tablespoon of black beans onto the cream cheese on each tostada shell.
Step 3) Top each tostada with a few slices of avocado and a few pieces of fresh tomato. Done!
Variation: Instead of avocado, try topping your tostadas with shredded raw cabbage or a bit of Almost Kimchi. Delicious!
