Easy. Today’s recipe is really just a simple combination of healthy ingredients that play well together as a colorful, delicious salad. Fresh cantaloupe contains only about 50 calories per cup, but offers up an entire day’s worth of Vitamin A and Vitamin C. Edamame contains around 100 calories per 1/2 cup serving, but is packed with fiber, protein, and iron. Enjoyed together, this power duo covers a wide range of nutritional need.
For two servings, simply toss together 2 cups of freshly diced cantaloupe and 1 cup of precooked, shelled edamame (readily available in the frozen vegetable section of most supermarkets). Sprinkle with a dash of sea salt. That’s all!
