Here’s a new spin on an old favorite, a truffle that tastes like a peanut butter cup! While some truffle recipes are a bit fussy, these Chocolate Peanut Butter Truffles are super easy. You can use either creamy or chunky peanut butter, depending upon the texture you prefer. You could even substitute the peanut butter for something a little fancier, like almond butter or crème de marron. Be creative and have fun!
Ingredients (Makes about 36 truffles)
4 ounces semi sweet baking chocolate
1/2 cup peanut butter
4 ounces cream cheese, softened
2 tablespoons powdered sugar
Any of the following for rolling: cocoa powder, coconut, powdered sugar, finely chopped nuts
Directions
Step 1) Microwave chocolate until melted, stopping the microwave to stir every 30 seconds.
Step 2) Stir in softened cream cheese, peanut butter, and powdered sugar. Blend well with an electric mixer or a sturdy wooden spoon.
Step 3) Chill mixture for one hour.
Step 4) With lightly greased hands, roll teaspoons of truffle mixture into balls. Roll balls into your choice of coatings (cocoa powder, coconut, powdered sugar, or chopped nuts).
Step 5) Store your Chocolate Peanut Butter Truffles in the refrigerator.
