Springtime Chocolate Truffles

WIN_20160313_171730At Crowded Earth Kitchen, we love chocolate truffles. They’re ridiculously easy to make, beautiful when dipped in chocolate coating, and make lovely hostess gifts. This recipe for Springtime Chocolate Truffles is so easy – what are you waiting for?

Ingredients (Makes about 36 truffles)

4 ounces bittersweet baking chocolate

1/2 cup semisweet chocolate chips

6 ounces cream cheese, softened

2 tablespoons powdered sugar

8 ounces pink chocolate coating for dipping (I used “Wilton melts,” available where cake decorating supplies are sold)

Gold dragees for decorating (or other decorative sprinkles)

Directions

Step 1) Microwave bittersweet and semisweet chocolate until melted, stopping the microwave to stir every 30 seconds.

Step 2) Stir in softened cream cheese and powdered sugar. Blend well with an electric mixer or a sturdy wooden spoon.

Step 3) Chill mixture for one hour.

Step 4) With lightly greased hands, roll teaspoons of truffle mixture into balls. Place balls in the freezer for one hour.

Step 5) After one hour, melt pink dipping chocolate in a glass bowl in the microwave. Stir every 30 seconds until fully melted.

Step 6) Balance each frozen chocolate ball on a fork, and lower the fork into the pink dipping chocolate. Remove, and tip the dipped truffle onto a baking sheet lined with aluminum foil. Sprinkle immediately with a few gold dragees. Repeat until all truffles are dipped.

Step 7) Store your Springtime Chocolate Truffles in the refrigerator. Enjoy!
