Football games and pots of chili are a universal combination. Half-time Taco Soup offers a fresh spin on an old favorite, and is sure to keep your crowd cheering. Enjoy the Super Bowl!
Ingredients (Makes one big pot)
5 pounds lean ground beef
1 onion, finely chopped
3 cloves garlic, finely chopped
1/4 cup chili powder (as mild or spicy as you prefer)
2 tablespoons cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 large (28 ounce) cans diced tomatoes
3 small (14 ounce) cans kidney beans, drained
1 green pepper, finely chopped
1 can black olives, sliced
tortilla chips for garnish
shredded cheese for garnish
sour cream for garnish (optional)
Directions
Step 1) Brown ground beef with onion and garlic in a large pot over medium heat, stirring frequently. Drain meat thoroughly.
Step 2) Add chili powder, cumin, salt, pepper, and tomatoes. Simmer over low-medium heat for 15 minutes, stirring occasionally.
Step 3) Add kidney beans, green pepper, and black olives. If you are making this before the big game begins, you can pause here and keep the soup warm in a Crock Pot set on “low.” Continue with Step 4 when Half-Time begins!
Step 4) Ladle soup into mugs (less likely to spill than bowls!) and top with tortilla chips, cheese, and sour cream before serving. May the best team win!
