Pineapple relish is incredibly versatile and easy to prepare. Try this relish as an alternative to cranberry sauce with your holiday dinner – it pairs wonderfully with meats, adds lovely color, and is sweet enough for children to enjoy. I’ll confess to even enjoying this festive pineapple relish on my morning toast!
Ingredients (Makes about 3 1/2 cups relish)
1 pineapple, peeled and cored
1/2 cup water
2/3 cup honey
1 cup sweetened coconut flakes
1/4 cup fresh lime juice
1 tablespoon lime zest
Directions
Step 1) Cut pineapple into small, bite size pieces. Place pineapple and water in a skillet and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
Step 2) Add honey, coconut, and lime juice. Bring to a boil, then reduce heat and simmer uncovered with occasional stirring for 15 minutes or until most of the liquid has cooked off.
Step 3) Remove pineapple relish from heat. Stir in lime zest. Serve warm or cold!
