Lazy Chocolate Zucchini Bread

Z1Here’s the quick story behind this recipe: Half-Pint wanted zucchini bread (actually, the request was “Can you turn this zucchini into something chocolate?”), but it’s nice outside. Autumn is a’comin’, and I want to be outside savoring the end of summer! This recipe allowed me to toss two loaves of delicious, chocolatey zucchini bread in the oven in right around five minutes. What’s not to love about that?

Z3Ingredients (Makes 2 loaves)

2 cups grated zucchini (unpeeled)

2 eggs

1/2 cup vegetable oil

1 box Devils Food cake mix

1/4 cup milk

1/2 cup flour

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

 Z2Directions

Step 1) Grease two loaf pans and dust with flour. Set aside.

Step 2) Combine all ingredients in order listed, stirring until well blended.

Step 3) Divide batter between two loaf pans. Sprinkle tops with sugar if desired.

Step 4) Bake in preheated 375 degree oven for 45 minutes, or until a toothpick inserted near the center comes out clean.

Step 5) Allow loaves to cool in pans for 15 minutes before inverting onto a wire rack. Cool completely, slice and enjoy!
