Cherry Cobbler

CobblerLast time on Crowded Earth Kitchen, we prepped a holiday liqueur using cherry pits. Here’s a delicious way to use the cherries themselves! This recipe can be easily doubled to fill a 9″ x 13″ cake pan, or to fill two pie dishes and give one to a friend.  🙂

Ingredients (Serves 6)

3 tablespoons butter

1 cup flour

1/2 cup white sugar

1/4 cup dark brown sugar, lightly packed

3/4 cup + 2 tablespoons milk

1/4 teaspoon cinnamon

1/2 teaspoon baking powder

1 1/2 cups cherries, pitted (fresh or thawed from frozen)

Step 1) Begin preheating oven to 350 degrees. While oven preheats, place 3 tablespoons butter (not margarine) in a 9″ deep dish pie pan. Place the pan in the oven for a few minutes to melt the butter.

Step 2) While butter is melting, stir together all remaining ingredients except cherries.

Step 3) Remove pan from oven, and pour batter on top of melted butter. Sprinkle pitted cherries evenly over the top of everything.

Step 4) Bake cobbler in a preheated 350 degree oven for one hour. Allow to cool slightly before cutting and serving.
