If BBQ chicken had a well dressed cousin, it would be Brown Sugar Chicken. This recipe offers layers – literally – of flavor, and is super easy to prepare. Served with sides of freshly harvested vegetables, Brown Sugar Chicken is a hearty, comfortable autumn dish to savor.
1 whole chicken, cut into 8 pieces
1/4 cup brown sugar
1/2 teaspoon salt
2 teaspoons white vinegar
1 small sweet onion, sliced very thin
1 very ripe tomato, sliced thin (seriously, you need a juicy tomato for this recipe!)
freshly ground black pepper
Step 1) Arrange chicken pieces on a large baking sheet with shallow sides.

Step 2) Combine brown sugar, salt, and vinegar in a small dish. Use a pastry brush to generously coat the top of each piece of chicken with the brown sugar mixture.
Step 3) Top each piece of brown sugar glazed chicken with a few thin slices of onion. Layer tomato slices over the onion, and sprinkle freshly ground black pepper over the top of everything.
Step 4) Bake chicken in a preheated 400 degree oven for 45 minutes or until a meat thermometer registers a temperature of 165 degrees.
