One of my kitchen helpers loves cherries, and helped me put this recipe together. The resulting cookies were fantastic, and have earned a spot in the regular rotation of Crowded Earth Kitchen’s after-school snacks. We hope you enjoy these as much as we do!
Ingredients (Makes about 4 dozen)
2/3 cup butter, softened
1/2 cup sugar
1 egg
1/2 small box (3 tablespoons) cherry-flavored gelatin
1/2 teaspoon baking powder
1/4 teaspoon cream of tartar
1 3/4 cups flour
3/4 cup finely diced candied cherries (readily available in grocery stores in December)
Directions
Step 1) Combine all ingredients in the order listed. Mix well.
Step 2) Drop by rounded teaspoons onto parchment-lined baking sheets. Leave at least 1 inch between cookies.
Step 3) Bake in a preheated 375 degree oven for 7 to 8 minutes. Allow to cool on the pan for 1 minute before transferring to a wire rack.
