Here’s a super fast side dish that’s fantastic with chicken or fish. Ready… set… GO!
Ingredients (Serves 4 with leftovers)
2 cups long grain rice
1/4 cup crushed pineapple (with juice)
2 tablespoons shredded coconut
1/2 teaspoon salt
3 1/2 cups water
1/4 cup pecans for garnish (optional)
Step 1) Combine all ingredients except for pecans in a large pot.
Step 2) Bring to a gentle boil, uncovered, then reduce heat to low and cover. Allow to cook on low until liquid is just absorbed (10 – 15 minutes) – check frequently after 10 minutes by tilting the pot to check for liquid.
Step 3) When liquid appears to be absorbed, turn heat off but do not remove lid from pot. Allow to rest for 5 minutes before removing lid.
Step 4) Garnish with pecans before serving, if desired.
