A cross between a pancake and an omelette, Pannekoeken (to the Dutch) or Pfannkuchen (to the Germans) makes a lovely breakfast no matter how you choose to pronounce it! Today we’re making this simple dish with cherries, for a sweet and cheerful twist.
Ingredients (Serves 4)
1 pint of pitted cherries (canned are fine), drained
1 1/2 tablespoons butter
4 eggs
1 cup flour
1 cup milk
1/2 teaspoon almond extract
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon cream of tartar
Directions
Step 1) Preheat oven to 400 degrees. As oven is preheating, place butter in a 2 quart casserole dish, and place dish in the oven for a minute or so to melt the butter. Remove from oven.
Step 2) Arrange cherries on bottom of casserole dish, and set aside.
Step 3) Combine all remaining ingredients in a large mixing bowl. Whisk briskly until ingredients are well blended.
Step 4) Gently pour egg mixture over cherries, and return casserole dish to oven. Bake for 25 – 30 minutes, until Pannekoeken is puffy and golden brown.
Step 5) Serve warm, dusted with confectioner’s sugar if desired.
