When you want a dessert that’s not too sweet, Tangy Citrus Cookies are a great option. Layers of lime flavor add a pleasant ZIP! to this recipe, which pairs wonderfully with a cup of tea.
1/2 cup butter, softened
1/2 cup key lime Greek yogurt
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3 1/4 cup flour
1 tablespoon of lime Jello powder
zest from one lime
Step 1) Cream together butter and sugar. Add egg, rum, and sour cream. Mix well.
Step 2) Add flour, baking powder, baking soda, and salt. Mix by hand; dough will be stiff.
Step 3) Chill dough for at least one hour before rolling 1/4 inch thick on a floured surface. Cut dough into any desired shapes shapes, and carefully transfer to greased cookie sheets.
Step 4) Lightly sprinkle unbaked cookies with lime Jello powder.
Step 5) Bake in preheated 375 degree oven for 6 – 10 minutes, until edges just begin to brown. Exact time will depend upon the size of your cookies; the small bells pictured above required 6 – 7 minutes in the oven.
Step 6) Remove cookies from oven and immediately sprinkle with lime zest. Cool on a wire rack.
