As hearty meats go, spare ribs are pretty economical. Spare ribs have enough fat to be very tender and flavorful when properly prepared, and are widely available for less (sometimes far less) than $2 per pound. A full rack can weigh up to 5 pounds, and makes a nice dinner presentation.

This recipe is very simple – perfect for busy summer days when you’d rather be outside than fussing in the kitchen!

Ingredients (Serves 4)

1 large rack of spare ribs (about 5 pounds)

2/3 cup prepared mustard (any variety you like)

1/2 cup dark brown sugar

1 teaspoon salt

1 teaspoon freshly ground black pepper (or use cayenne pepper for extra kick)

Step 1) Place rack of spare ribs on a large baking pan with shallow sides.

Step 2) Use a pastry brush to coat the top of the rack of spare ribs with mustard. Then, sprinkle brown sugar, salt, and pepper over the mustard.

Step 3) Bake rack of spare ribs in a preheated 300 degree oven for 3 hours. Halfway through, cover the pan with foil to prevent drying.

Step 4) After 3 hours, remove ribs from oven. Let sit without removing foil for 10 minutes before slicing and serving.

That’s all! So simple!
