Kids in the Kitchen: Strawberry Waffles

This recipe is super easy, fun, and a big hit with kids and teens! Here at Crowded Earth Kitchen, a double batch of Strawberry Waffles was featured on a weekend sleepover midnight breakfast buffet. There were zero leftovers. 🙂

Ingredients (makes about 15 mini waffles)

2 cups flour

1 teaspoon sugar

1 1/2 tablespoons baking powder

1/4 teaspoon salt

1 (0.44 oz) package strawberry flavored, sugar free gelatin dessert mix (“Jell-O mix“)

2 eggs

1 3/4 cups milk

1/2 cup vegetable oil

Directions

Step 1) Combine dry ingredients in a large bowl. Slowly whisk in wet ingredients. Whisk until well combined.

Step 2) Turn on mini waffle iron. Spray mini waffle iron with nonstick cooking spray. Add 1/4 cup of waffle batter to mini waffle iron and cook according to the directions on your appliance (my mini waffle iron takes approximately 2 minutes to cook each waffle). Repeat with remaining waffle batter.

Step 3) Serve waffles with whatever toppings make you smile, such as strawberry jam and whipped cream.
