Yes, grilled carrots. We’ve already talked about how healthy carrots truly are, so it’s worth finding fun new ways to enjoy them! Grilling carrots caramelizes a bit of the natural sugar in this root veggie, and the crisp edges are delicious. The trick to perfectly grilled carrots is to lightly steam them first. This makes the carrots more tender, and prevents them from drying out on the grill.
To prepare, simply cut carrots in half the long way (I like purple carrots, but any carrots will suffice) and lay them cut side down in a steamer. Steam carrots for 4 minutes (5 minutes if the carrots are very large).
Next, remove carrots from the steamer and place cut side down on the grill. Grill over a medium flame for 2 or 3 minutes, until carrots take on a light char. Remove carrots from grill and season simply with salt and pepper. Voila! Done.
