I enjoy a good cheeseburger as much as the next person, but I don’t enjoy the 1,000 sit-ups required to burn those calories. That’s not a joke – a hearty cheeseburger will set you back about 500 calories, and that’s without the bun.
For less than 150 calories we can swap out that cheeseburger for a really delicious portabella “burger”. A large portabella contains only about 35 calories, is low in cholesterol and saturated fat (unlike that cheeseburger), and packs a punch of fiber. Dress it up properly, and a portabella “burger” can be pretty fancy!
To prepare a portabella “burger,” lightly brush both sides of a portabella mushroom cap with extra virgin olive oil. Crumble an ounce of chevre cheese (or bleu cheese, if you prefer) over the inside of the mushroom cap. Sprinkle with diced red pepper, sea salt, and pepper. Grill over a medium flame for 3 or 4 minutes, until cheese is melty. Enjoy!
