Pumpkin Pudding

Pudding1Pumpkin is one of the healthiest veggies around! It’s low in calories but chock full of fiber and vitamins. This quick and easy recipe allows you to serve up veggies as a delicious (and healthy) dessert! Your secret is safe with me.

Ingredients (Serves 6)

2 cups pumpkin puree (fresh or canned)

2 cups milk

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1 small box of “cook and serve” butterscotch pudding

Directions

Step 1) Use an immersion blender to puree all of the ingredients together, as shown above.

Step 2) Heat mixture over medium heat, stirring frequently to prevent scorching. Bring mixture to a gentle boil, and stir constantly for one minute. Remove from heat.

Step 3) Ladle pudding into six serving dishes and refrigerate for at least two hours. Enjoy!
