Step 1) Pull or slice meat from your rotisserie chicken, and shred or cube into bite size pieces. This will only take a few minutes. You should end up with approximately 4 cups of delicious chicken.

Step 2) Saute carrots and celery in oil(s) for three minutes in a large skillet, stirring often. Add garlic and ginger; saute for an additional minute.

Step 3) Drain pineapple, reserving the juice. Add drained pineapple and chicken to the skillet.

Step 4) In a small bowl, combine pineapple juice, soy sauce, and cornstarch. Whisk well so that there are no little cornstarch lumps. Add this mixture to the skillet. Bring to a gentle boil, stirring frequently. Boil gently for 1 – 2 minutes. The liquid in the skillet will thicken into a lovely sweet sauce.

Step 5) Remove skillet from heat and garnish with chopped fresh parsley. Serve your Ten Minute Rotisserie Chicken Stir-Fry over rice, noodles, or all by itself!
