Kids in the Kitchen: Strawberry Creamsicles

straw2Kids love popsicles! They can run around the back yard with them, and rinse off sticky hands and faces by running through the sprinkler. Homemade popsicles are essential… they cost less than store-bought, and using wholesome ingredients means kids enjoy more flavor, take in a few vitamins, and won’t even miss all of the corn syrup and artificial colors in the freezer section of the supermarket.

Strawberry Creamsicles are a favorite here at Crowded Earth Kitchen, but feel free to substitute any fresh, ripe fruit!

Ingredients (Makes 6 popsicles)

1 cup sliced ripe strawberries

1/2 cup fat free half-in-half (or use whole milk)

2 tablespoons powdered sugar

1/4 teaspoon vanilla extract

Step 1) Blend all ingredients in a small blender until smooth.

Step 2) Pour mixture into popsicle molds, leaving 1/4 inch of space at the top.

Step 3) Insert popsicle sticks/tops, and place in the freezer until solid.

Step 4) Enjoy your popsicles outside! Playing in the sprinkler is optional, but encouraged.  🙂

  1. Going to try fresh peaches in place of the strawberries. I also do not have popsicle molds, but will use dixie cups. Wish me luck!
