Thoughtfully prepared, Brussels sprouts can be as delicious as they are nutritious – and WOW are they vitamin packed! This simple recipe preserves their cheerful bright color, adds a sweet and tangy glaze, and includes delightfully juicy pomegranate seeds as a final touch. Ingredients (Serves 4 – 6)
1 pound Brussels sprouts
1/4 teaspoon salt
2 tablespoons balsamic vinegar
2 tablespoons honey (or use maple syrup for a vegan option)
1/4 cup fresh pomegranate seeds
Directions
Step 1) Trim ends from Brussels sprouts and cut each Brussels sprout in half.
Step 2) In a stovetop or microwave steamer, steam Brussels sprouts for 8 – 10 minutes. Stop when Brussels sprouts are not quite cooked through – they should be very al dente, not soft!
Step 3) Transfer steamed Brussels sprouts to a baking dish. Sprinkle with salt, and drizzle with balsamic vinegar and honey.
Step 4) Bake coated Brussels sprouts in a preheated 375 degree oven for 15 – 20 minutes. Remove from oven when Brussels sprouts are just beginning to caramelize.
Step 5) Garnish with pomegranate seeds and serve!
