Peanut Butter Kiss Cookies – KID STYLE!

Question: What do children enjoy more than cookies with candy in the center?
Answer: Cookies with MORE candy in the center!

These cookies offer a fun spin on traditional Peanut Butter Kiss Cookies, and are sure to be a hit with pint-size snackers everywhere. The recipe makes a very large batch – feel free to cut the recipe in half if your sweet tooth isn’t quite so big!

Ingredients (Makes 100 cookies)

1 1/4 cups creamy peanut butter

1 1/4 cups butter, softened

4 eggs

2 cups white sugar

2 cups brown sugar

1 tablespoon almond extract

1 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

5 cups flour

100 Hershey’s Kisses, unwrapped

25 Reese’s Peanut Butter Cups, cut into quarters

Additional sugar for rolling

Directions

Step 1) Using an electric mixer, cream together peanut butter, butter, and sugars. Add eggs and almond extract. Blend well.

Step 2) Using a heavy wooden spoon, stir in salt, baking soda, baking powder, and flour (one cup at a time).

Step 3) Roll rounded teaspoons of dough into balls, and roll balls in sugar. Place balls onto baking sheets lined with parchment paper, leaving at least 2 inches between balls of dough.

Step 4) Press a Hershey’s Kiss into the center of each ball of dough.

Step 5) Bake cookies in a preheated 350 degree oven for 10 – 12 minutes or until cookies are set and the bottoms are just beginning to brown. Remove from oven and immediately press 1/4 of a Reese’s Peanut Butter Cup into each cookie, right next to the Hershey’s Kiss. Allow cookies to rest on the pan for 1 minute, before transferring to a wire rack.
