Sardines are high in protein, iron, calcium, and chock full of heart healthy omega-3 fatty acids. This small, sustainable fish contains every amino acid essential to the human body while boasting low levels of saturated fat and absolutely no sugar. What’s not to love?
For this dish, I bought a 250 g package (approximately 1/2 pound) of frozen sardine fillets and allowed them to thaw in the refrigerator for about 4 hours. I heated 1/4 cup of Portuguese extra virgin olive oil in a large skillet over medium heat, and added 3 cloves of minced garlic. After sauteeing the garlic for 1 minute, I added the sardine fillets… they cook FAST! After 30 seconds, I flipped the fillets. After another 30 seconds, they were finished. I transferred them to a serving plate, sprinkled the fillets with Portuguese sea salt, and served these delightful little fish with a crusty baguette!
Life is short. Eat good food.
